  • Domaine BILLAUD-SIMON Chablis Valmur 2018

    NT$ 3,900

Lemon, lime, apple, kiwi, cream, vanilla – a full nose picture – can hardly be described in detail. On the palate, too, you will be carried away by the complexity and minerality of this picture book Chablis – deep, rich and elegant!

  • Domaine BILLAUD-SIMON Chablis Fourchaume 2012

    NT$ 2,500

The Fourchaume climate, located on the right bank, is one of the most famous 1er Crus. Its south / southwest exposure guarantees permanent sunshine. In toponymy, “Fork” designates the crossroads.
The color is white gold with light pale green reflections.
The elegant nose with fruity scents.
The attack is frank, clean on mineral and citrus notes.
The palate is balanced on the same aromatic palette as the nose. Good lingering finish.

  • Domaine BILLAUD-SIMON Chablis Montée de Tonnerre 2018

    NT$ 2,600

Along with the Blanchots, this is the most floral-suffused wine in the range with its elegant and pure aromas of white peach and discreet Chablis elements that include tidal pool and quinine. The succulent but impressively intense middle weight flavors are less generous but notably finer while exhibiting outstanding length on the bone-dry finale. This classy and tightly wound effort is also potentially excellent and well-worth considering.

  • Domaine BILLAUD-SIMON Chablis Mont de Milieu 2018

    NT$ 2,400

Bright and clear with delicate green reflections. This highly aromatic 1er Cru offers ripe citrus fruits and white flowers. The palate is well-rounded with remarkably persistant aromas.

  • Domaine BILLAUD-SIMON Chablis Vaillons 2018

    NT$ 2,100

Bright, clear hue with attractive golden tinges. This 1er Cru offers remarkable aromatic complexity with aromas of ripe citrus and white flowers. the palate is round and seductive with a lively attack. Excellent length and a refund aromatic persistency combining fruit notes and a delicate acidity. Pleasant sensation of freshness.

  • Domaine BILLAUD-SIMON Chablis Tête d’Or 2018

    NT$ 1,650

slightly musky, nutty bouquet – much more intriguing than the Chablis Village. The palate is well balanced with lemon, lime and a touch of bitterness on the entry. I appreciate the edginess of this Chablis and the bite on the saline finish. Excellent.

  • Domaine Bonneau du Martray Corton Rouge Grand Cru 2019 (配售)

    Climate
The Charlemagne climate, the historical heart of the CortonCharlemagne Grand Cru appellation, harmoniously rounds off the Corton hill on its western side. The vines facing west are exposed to the sun from mid-morning until sunset, a unique feature in Burgundy. The air circulation caused by the neighbouring hills airs out the vineyard and preserves the freshness of the grapes. Pinot noir plots are located at the bottom of the hillsides on the clayey soils of the hill. The composition of this cuvée reflects the freshness and power of this great Charlemagne terroir.
    Vinification
The pinot noir is picked by hand with a first sorting in the vineyard. Only perfect bunches are selected. After reception in the winery, the grapes are meticulously sorted and completely destemmed. The goal is to put intact berries in wooden vats to preserve all their aromatic and gustatory potential. The interventions during the vatting are the traditional gentle pigeage, remontage and delestage. The wine is then transferred to French oak barrels for 12 months and will continue to age for another 6 months in stainless steel tanks, before being finally blended and bottled.

  • Domaine Bonneau du Martray Corton-Charlemagne Grand Cru 2019

    Climate
The Charlemagne climate, the historical heart of the CortonCharlemagne Grand Cru appellation harmoniously rounds off the hill of Corton on its western side. The vines facing west are exposed to the sun from mid-morning until sunset, a unique feature in Burgundy. The air circulation caused by the neighbouring hills ventilates the vineyard and preserves the freshness of the grapes.
Bonneau du Martray’s vineyard run from top to bottom of the hill, where the thickness of the clays, silts, marls and different types of limestone make up a mosaic of soil with very different requirements and results: the parcels at the foot of the forest on the top of the hill give the wine a crystalline appearance, with floral and citrus fruit notes. The vines in the heart of the hill structure the wine and bring grain to it, while the parcels at the bottom of the hill, richer in minerals, bring the power of Charlemagne.
The composition of this unique Bonneau du Martray cuvée reflects the complexity and richness of this great terroir, the most authentic representation of Charlemagne’s terroir.
    Vinification
When the fruit is received at the winery, a light crushing of the berries takes place before pressing. This allows a gentle extraction of the aromatic quintessence of the vintage. After settling, fermentation takes place in a combination of new and aged French oak barrels. Each barrel is followed with great care until its first racking. At this stage the blending starts. The resulting lots
continue their ageing on their fine lees through a second winter. At the end of this period, the wine is racked a second time to separate its remaining lees. It is then moved to tanks for two additional months to assure homogenization. The wine is finally bottled during a waning phase of the moon.
