白中白帽子款,年產量約 7000 瓶,精選來自白丘的 Chardonnay 45年葡萄樹藤,將每一個小地塊收成的葡萄以布根地木桶分開釀造,搭配Erick de Sousa 一絲不笱的釀酒精神,迷人的礦物風味及多層次豐富表現,奔放的酵母香氣,細膩典雅的檸檬,花香中點綴著布里歐奶油麵包、洋梨及蘋果香氣。不同於其他 Extra Brut 的白中白香檳,有著更厚實的口感,尾韻的收斂卻意外乾淨明亮,氣泡飽滿卻不具侵略性。

Each bottle of our Grand Vintage Champagne has been produced with our oldest plots, whose grapes have maximum aromatic potential. The pale gold color with silvery reflections is highlighted by a beautiful carpet of moss. It is a mature nose. The praline and dry herbs give way to floral notes.
After an attack of remarkable freshness, the mouth offers a beautiful amplitude which increases as the tasting progresses. The finish is long and marked by notes of hazelnuts.
This Grand Vintage 2011 is a fine example of Chardonnay from which we have been able to wait for maturity.
It will go wonderfully with a Bresse vollaille or a quail fillet with its white mushroom sauce.

This Cuvée is dedicated to my Grand Father Jean FANNIERE who decided, in the 1950s, to no longer sell his grapes and to produce his own Champagne.
The Grand Cru vines used at the time, located on the Cramant terroir, are still used to produce this Cuvée, and are over 50 years old. The sugar dosage is “extra brut” (only 3 g / liter of sugar) and allows you to express all the minerality and finesse of these terroirs after 5 years of aging in the bottle. To taste with oysters, fish in sauce or as an aperitif …
